DELICIOUS SALMON CHOWDER
This soup is a delicious transitional meal from the Winter to Spring season.
Perfect for a casual evenings meal for loved ones and guests. Serve with warmed "naan bread" and candlelight.
PREPARE BROTH
Bring 1 litres of filtered water to a boil.
Add 1 litre Organic veg. Broth
Blend in 2-3 tablespoon of Cold mountain Hawaiian miso soup base
Add one chopped Organic onion to broth.
2 Kelp strips
½ leek finely chopped
Simmer for 20minutes
Add 1-2 tablespoon of coconut butter and or reg. butter
ADD VEGETABLES
1 lg. organic carrot cut in rounds
1 handful of snow peas, washed and cleaned , whole
1 lg. organic potato chopped in small cubes
1 handful of shitake mushroom ( or other) sliced lengthwise (if rehydrating mushrooms add to broth earlier)
AND SALMON
2 medium size skinned salmon filet /Handful of shrimp optional /4 people
Rinse and (peel skin) from salmon. Cut salmon into bite size pieces
Add salmon pieces and shrimp to soup base.
Add 1 cup of coconut milk
Simmer until fish is just cooked thru (10 to 15min... max)
Add Pinch sea salt, pepper, 1 -2 tsp herbes des provence and a 1/2 tsp. of turmeric
Add a handful of finely chopped parlsey to each bowl as you serve.
